Recipe | Green tea + acai tartlets

If you’re looking for a DF , GF , VGN no added sugar healthy treat this is the one! I tend to make large batches of these and keep them tucked away in the freezer but they don’t last long.

Acai berry is rich in vitamins and minerals. It contains vitamins A, E and C. Amongst minerals acai berries contains calcium, iron , potassium and sodium. They also contain high levels of antioxidants making them a great addition to a no guilt dessert snack.

 

Tartlets

1 cup almond meal

1 cup desiccated coconut

1/2 cup cashews

1/8 tsp salt

1 tsp vanilla powder

1/2 cup rice malt syrup

Filling

2 cups cashews (soaked overnight in 1 green teabag and hot water)

2 tbsp coconut oil

juice of 2 lemons

2 tbsp coconut water

1/2 cup rice malt syrup

4-5 tbsp acai powder

1/8 tsp Himalayan salt

grated lemon skin to garnish

How to:

  1. Process almond meal, coconut, cashews, vanilla powder and salt in a food processor for 1 min.
  2. Add rice syrup and pulse until the mixture becomes sticky.
  3. Press base mixture into small tartlet cases and freeze whilst preparing the filling.
  4. Drain cashews and process with coconut oil, lemon juice, coconut water and rice malt. The cashews need to become smooth so keep processing.
  5. Add acai powder and salt and pulse.
  6. Scoop acai filling into tartlets and garnish with lemon.
  7. Freeze for 2-3 hours before eating.
