Recipe | Spicy pumpkin soup

This soup recipe is a family favourite and my go to for something simple when I don’t have a lot of time to prepare food. I have made this recipe many times and it’s always a winner, my children just love it! It’s like a big warm hug on a cold wintery day. I can almost smell the coriander and cumin just thinking about it.

Spicy Pumpkin Soup aka “Happy Soup”

Ingredients

1 – 2 tbs coconut oil

1 finely diced onion

1 – 2 garlic clove , crushed

1 leek , finely sliced

1 large potato

1 kg pumpkin , peeled + diced

1 Bay leaf

Fresh corriander

1/2 tsp ground nutmeg

1/2 tsp ground coriander

1 tsp ground cumin

1 – 1 /2 L vegetable stock ( personal favourite is Vegeta brand stock)

Dried shallots

1 red chilli

How to make:

Heat oil in a large pot over low heat, add onion leek and garlic and cook for about 2-3 mins until soft but not coloured. Add spices and cook stirring for 30 seconds. Add the pumpkin and potato and cook, stirring for 1-2 mins. Add the stock and bring to the boil. Once soup has come to the boil turn heat to low and cook for 30 mins. (When I have more time I like to cook the soup on low for a few hours.)  Remove the bay leaf.

Blend the soup in batches in a food processor.

Garnish soup with pepper , fresh coriander, dried shallots and chilli for the adults. Yum!
