I thought I would try something a little different and treat my two babes with a healthier version of the “LCM” bar. We don’t like to eat processed foods or foods that are high in refined sugar.
So here is my recipe , I hope your kiddies enjoy!
Kid’s “LCM” Bars
4 cups puffed rice
2 tbsp of cacao powder
1/2 cup of desiccated coconut
2 tbsp of chia seeds
130g coconut oil, melted
100 – 120grms sweetener of choice (depending how sweet you like them)
Pinch of cinnamon
Optional: add dried fruit
Place all dry ingredients into a large bowl.
Melt coconut oil over low heat , remove. Add honey and stir until combined.
Pour honey coconut oil mixture into bowl of dry ingredients and stir to combine.
Press the mixture into a baking dish lined with baking paper.
Place in fridge for one hour or until set.
Keep in the refridgerater.
